Chocolate Fondant with Vanilla Milkshake

Serves 4
Ingredients
100 gm butter
100 gm dark chocolate
80 gm castor sugar
5 gm baking powder
12 gm cocoa powder
Extra cocoa powder to coat moulds
55 gm plain flour
2 eggs
1 egg yolk
2 scoops vanilla ice cream
250 ml milk
4 dariole moulds or oven proof teacups
Method:
Pre-heat your oven to 180° C / 350° F / Gas mark 4
Brush softened butter inside the moulds or cups.
Sprinkle extra cocoa powder into the cups to coat surface and shake out the excess.
Place butter, chocolate, sugar and cocoa powder in a plastic or glass bowl and microwave until the chocolate has melted (about 2 minutes, but check every 30 seconds).
Stir the mixture with a spoon until all ingredients are blended.
Add the eggs and egg yolk, mix until the mixture looks glossy.
Sieve the flour and baking powder into the mixture and fold until combined and the mixture is smooth.
Pour the mixture into the moulds, leaving room in the moulds for the mixture to rise when cooking.
Place on middle shelf of oven for 10 minutes.
Remove from the oven and let the moulds stand for 5 minutes before turning them out.
For the milkshake:
Place the vanilla ice cream and milk in a bowl or blender and whisk or blend till smooth.
Serve the milkshake in a glass alongside the chocolate fondants.
